SOFRITO AS SAVIOR?
Could onion and garlic consumption be behind Puerto Rico’s low incidence of breast cancer? That’s what a study from the University of Buffalo and the University of Puerto Rico suggests. Previous studies showed that onion and garlic have anti-carcinogenic properties, and they happen to be found in the island’s favorite condiment, sofrito. It was a small study and didn’t control for variations in sofrito recipes, but still, the researchers were confident enough to state in Nutrition and Cancer that “sofrito intake, when examined alone, was inversely associated with breast cancer.”
